Kalkandu pongal

I have never tasted this kalkandu pongal, so wanted to try for this pongal. Kalkandu is sugar candy. sakkarai pongal is my favorite one which is with jaggery and this with sugar candy. Milk pongal is also as white as kalakandu pongal.

Ingredients:
  • Raw rice - 1 cup
  • Moong dal - 1 tbsp
  • Sugar candy | kalkandu - 3/4 cup
  • Milk - 2 cup
  • Water - 2 cup
  • Cardamon powder - 1 tsp
  • Cashews - 5
  • Ghee - 1 tbsp


Method:

Heat a pan and fry moong dal till aroma rises. Combine with rice and rinse twice. Transfer to cooker with 1.5 cups of milk and 1.5 cups of water.
Pressure cook for 15 minutes in a low flame. Switch it off. After the pressure releases, let it cool down. Mash it completely.
Heat a pan with 1/2 cup of milk and 1/2 cup of water. When it boils add kalkandu(sugar candy), mix till it dissolves completely. Combine the rice with kalkandu. 
Add cardamon powder and 2 tsp of ghee. Fry cashews in a low flame and transfer to pongal.
Serve hot.
